Sweet Potato Pilaf

Quick, Tasty, and Colorful.  A wonderful alternative to the usual rice casserole.  ~ Glyn

1 medium sweet potato cut into 1/4 inch dice
1 C jasmine rice
2 scallions (green and white parts) thinly sliced
3 tbs butter (or substitute)
2 C chicken broth or water
1/4 tsp salt
1/8 tsp ground coriander
1/4 tsp ground cumin.

Melt the butter in the chicken broth.  Combine all ingredients, cover tightly with foil, and bake for one hour at 325.
