Black Bean Chili
This is a good project for a day when you have lots of other things to do. Once you get it on the stove, it takes care of itself until you are ready to eat. If you don’t remember to pre-soak the beans the evening before, do it in the Instant Pot. Black Beans will pre-soak in only five minutes of pressure cooking. Use the direct release method and then add them to the rest of the recipe.
Feel free to improvise with whatever spices you have on hand. Chili is a highly variable, individual concoction. I tend to use more spice than most, so I’ve erred on the side of caution in the recipe. Top with shredded cheese, and serve with corn chips or tortillas. To make the dish vegetarian, just omit the ground
beef.
2 cups dried black turtle beans (or two cans prepared black beans)
8 oz ground beef
1 large onion, chopped
1 tbsp minced garlic
1 tbsp freshly grated orange peel
1 medium potato diced
2 cups orange sections (about 2 oranges)
1 tsp ground cumin
1/2 tsp ground cinnamon
1/2 tsp dried oregano
1/4 tsp chipotle chili powder
1/2 tsp regular chili powder
1/4 tsp ground black pepper or tellicherry pepper
1/4 tsp crushed red pepper
1 tsp dried cilantro
1 packet Goya Sazon Seasoning
1/2 tsp salt
4 cups water
1. In a large sauce pan or dutch oven, sauté the ground beef with the onion and garlic. Drain the fat.
2. If omitting the ground beef, sauté the onion and garlic in 1 tbsp olive or vegetable oil.
3. Add all the remaining ingredients. Bring to a boil, reduce heat and simmer until beans are done and flavors are melded.
Servings: 10
Yield: Feeds the whole family and leaves plenty to store or freeze for another day.
