Creamed Chicken with Vegetables
Simple, quick, easy and very comforting. Wholesome food for trying times.
2 skinless, boneless chicken thighs
3 mushrooms sliced
1 tbsp olive oil
1 medium carrot, sliced
1 medium russet potato, cubed
1/2 cup frozen peas
1/4 tsp granulated garlic
1/2 tsp dehydrated onion
1 chicken bouillon cube, dissolved in one cup water
1/2 tsp poultry seasoning
1 tbsp corn starch
1. In the oil, saute the mushrooms and the chicken.
2. Add the potatoes, carrots, garlic, onion, poultry seasoning and bouillon. Cover and simmer for 30 minutes.
3. Add the peas. Mix the cornstarch with 2 tbsp. water and stir in. Cook on medium heat for five minutes to thicken.
4. Serve alone or over rice
