Whole Wheat Banana Chocolate Muffins

Not too sweet, with only 1 tsp of sugar and 175 calories per muffin, these have a bit of crunch and a lively but pleasing amount of spice. They can make an appearance at meals and snacks throughout the day. The spices are optional, as is the chocolate extract, but both are useful additions when working with less sugar.

1 1/2 cups unbleached all-purpose flour
1/2 cups whole wheat flour
1/4 cup unsweetened cocoa
1/2 tsp salt
3 tsp baking powder
1/2 tsp each, cinnamon, ginger and cardamom (all optional)
2 tbsp walnuts finely chopped
1 tsp vanilla extract
1 tsp chocolate extract
1 cup unsweetened soy milk or whole milk
4 tbsp butter, melted
4 tbsp sugar
2 eggs
1 banana, mashed

1. Stir together the dry ingredients, including the chopped walnuts.

2. Mix together the liquid ingredients, including the mashed banana.

3. Combine liquid and dry ingredients.

4. Pour into prepared muffin tin.

5. Bake at 350 for 20 minutes or until a toothpick inserted into the middle comes out clean.
