Pomegranate Glazed Lamb Rib Chops

Marinated in Pomegranate Molasses and Orange Balsamic Reduction then broiled or grilled and topped with Pomegranate seeds. Serves two but is easily multiplied.

4 lamb rib chops — about 8 ounces total
1 tablespoon pomegranate molasses
1 tablespoon extra virgin olive oil
1 tablespoon orange balsamic vinegar glaze
1 small clove garlic, minced
1/4 teaspoon dried orange peel
1/8 teaspoon kosher salt
1/8 teaspoon red pepper flakes
2 tablespoons pomegranate seeds

Pat rib chops dry.

Combine pomegranate molasses, olive oil, basalmic reduction, garlic, orange peel, salt and red pepper flakes. Stir with a fork to incorporate and make an emulsion.

Drizzle marinade over both sides of the chops and let sit at cool room temperature for at least and hour or until ready to cook.

Grill or broil for 3-4 minutes per side for medium rare chops. Let rest 5 minutes.

Garnish with the pomegranate seeds and serve.
