Homebound today with a foot of snow in 9 hours and a storm warning for the next 24 hours, so as long as the power is on I think I will cook and write today. We are still in the first two weeks of our new vegan lifestyle, and having said goodbye to my former ways of cooking, I am searching out whole food comfort foods.
These are my first attempt at vegan baking. I have been doing gluten-free sugar-free cooking for years, but this is a very different endeavor. Without gluten, sweeteners, eggs or dairy, I am feeling rather challenged, but here we go. I am using applesauce instead of oil and flaxseed meal instead of eggs. And please note that these are unsweetened. They smell heavenly but didn’t rise very much, hence the name “biscuits” rather than muffins – at least until I get that part worked out! Vegan Oatmeal Raisin Nut Biscuits

1 c oat flour
1 c oatmeal
1 tbsp. baking powder
¼ tsp. salt
½ tsp. cinnamon
½ tsp. cardamom
¼ tsp. ginger
¼ tsp nutmeg
1 dash cloves
2 tbsp. flax meal mixed with ¼ c water
¾ c unsweetened almond milk
8 oz unsweetened applesauce (or 4 oz. applesauce and 1 grated apple)
¼ c raisins
¼ c chopped walnuts

Combine oatmeal and oat flour with the baking powder, salt and spices.

Stir in the nuts and raisins
Mix the flax seed and water together. Stir in the applesauce and the almond milk.

Add to the dry ingredients.
Place into greased muffin cups and bake at 425 for 12-15minutes.
