Healthy Breakfast Muffins
Quick, Easy and Healthy, too! Use organic products and it’s even better.
1 cup all-purpose flour
1 cup whole wheat flour
1 1/2 cups oats
1 tbsp baking powder
1/2 tsp. salt
1/2 tsp. cardamom 1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 cup honey
1/4 cup vegetable oil
2 large eggs
1 cup soy milk
1 Combine all dry ingredients in a large bow. Stir to mix thoroughly.
2 Beat the eggs with a fork.
3 Add the milk, oil and honey to the eggs.
4 Add the liquid ingredients to the dry ingredients. Stir to mix but do not beat.
5 Pour into prepared muffin tin or paper muffin cups.
6 Bake in pre-heated 375 degree oven for 15-18 minutes.
7 Remove from the pan and cool on racks.
